Why honey cake has to rest overnight
A fresh-baked honey cake and a honey cake that has rested are two different desserts. Here's what the wait actually does.
Ordering a cake for a celebration: how much notice we really need
The most common message we get is some version of: "Is it too late to order a cake for…"
Usually the answer is no. But it helps to know how the timing works, so here it is plainly.
From the case — within the hour
Slices and pastries are often ready the same day. If something is in the case, you can have it within the hour. The menu shows what's available; if a slice is sold out it will say so.
A whole cake — a day ahead
A whole honey, cloud or tiramisu cake needs about a day's notice. The cake is baked and rested before it's finished — we use the time to assemble, decorate and pack it so it travels well, and honey cake in particular is rested overnight so the layers turn tender. Order the day before and you're set; for a specific date, a little earlier is calmer.
A custom cake — 24 hours, minimum
Anything designed with you — a flavor combination, a written message, a photo or fondant work — needs at least a full day. Vegan or gluten-free custom cakes need 36 hours, because those recipes don't forgive being rushed.

These are guidelines, not walls. If you're up against a deadline, message us through the chat — sometimes we can make it work, and if we can't we'll tell you straight away rather than let you hope. Earlier is always calmer, for you and for the kitchen.
