Ask anyone who grew up with honey cake and they'll tell you the same thing: you do not eat it the day it's baked.
Straight out of the oven, the honey layers are firm — almost crisp at the edges, dry in the middle. Delicious in their own way, but not honey cake. Not yet.
Honey cake is built from thin baked layers with soft custard or sour-cream filling spread between every one. When the cake is first assembled, those two things are still separate: dry biscuit, wet cream. Left alone overnight in the cold, the moisture from the filling slowly migrates into the layers.
By morning the biscuit has drunk in just enough to turn tender. The line between layer and cream blurs. Cut a slice and it holds together as one soft thing, not a stack — that is the texture the whole cake is aiming for.
It is tempting, when an order comes in for the afternoon, to slice a cake that was baked that morning. We don't. A cake that hasn't rested is a cake that hasn't finished — and the customer would taste the difference even if they couldn't name it.
So when you order a whole honey cake, that is why we ask for a day's notice. The slicing and packing is quick; the real work — the resting — happens the night before, while the kitchen is dark.
It's the least glamorous step in the recipe, and the one that matters most.

Slices and pastries from the case are often ready the same day. Whole cakes need about a day's notice so they can rest and be finished properly. Custom cakes need at least 24 hours, and vegan or gluten-free needs 36.

Tell us before you order and we'll do our best. Everything is baked in one home kitchen with shared equipment, so we can't guarantee a fully allergen-free environment — flag any serious allergy and we'll be honest about what we can do.
Start a custom order with the flavor, size, message and any photo or design you have in mind. We reply with a price and a time, and only start once you've confirmed. Minimum 24 hours' notice.
We confirm your order by phone or message and take payment at that point — cash or card. Your online order is a request, not a charge.
